Out of my comfort zone here in the deep south, reaching to my roots and building on an extensive culinary background. Hardly a British “Martha Stewart” More of a no nonsense appraoch to some of the mysteries that appear to befuddle the would be cook. I beleive that everyone who has to breathe to exist, should be able to cook. Feeding your children well, teaching them how, is a must, it’s more than a gift. It is a skill for life.

Cranberry Relish

Ingredients:

  • 12 ozs fresh cranberries
  • 1 large apple, peeled, cored and diced
  • 1 cup raisins
  • 3/4 cup sugar
  • 1/2 cup orange juice
  • 1/2 tsp cinnamon
  • 1 oz fresh grated ginger
  • 1 tblsp balsamic vinegar
10 servings:
90 cals per. 23 g carb
no protein, fat or cholesterol
 

Method:

Maple Pumpkin Butter

Great seasonal gift or fundraiser.

Ingredients:

  • 1 x 29 oz can pure pumpkin puree
  • 3/4 cup sugar
  • 3/4 cup apple cider  (that’s apple juice to Brits NOT Strongbow or Woodpecker!!!)
  • 3/4 cup maple syrup
  • 1 1/2 tsp cinnamon
  • 1 2/2 tsp ground ginger. ( I actually prefer to use fresh)

Healthy Eating in no time at all

Getting back to basics.

Mix jumbo lump crab with tiny amount of dressing of choice (I used English salad cream, lemon juice and tarragon).

 One sweet potato diced with 2 bunches of green onions (spring onions, salad onions whatever you know them as).  Sweat down until soft but not mushy.

Pork with sauteed peaches and plums in rum and cinnamon sauce!

pork with fruit salsa and steamed veggiesThis is an easy supper, saute the pork chop or loin slice, add diced peaces and plums (or apples depending on season).  Cook a little, de glaze the pan with a little dark rum.  Add a sprinkle of home made cinnamon sugar.  Serve with steamed veggies!  Less than 20 minutes start to finish!

Banana Bread.

Ingredients:

  • 10 oz butter
  • 2 tsp vanilla
  • 2 cups sugar
  • 4 eggs
  • 6 mashed bananas
  • 4 cups  A.P flour
  • 1 tsp baking powder
  • 1 cup walnuts
  • 12 oz choc chips

Method:

  • Cream butter and sugar
  • Add eggs slowly with a little flour

English Shortbread

What a crazy week, maybe finally some work…well one would hope!  I bought a folding table for my sewing machine and have cut out vintage style aprons for my girls, just need to sew them together…just need to do a stack of things, truth be told.  I got a little carried away after that and bought another folding table for the second dormer window in my office and will use it for my seed production.  My office is now home to my treadmill, bowflex, though I walk outside 5 days out of 7.  My sewing table, sewing  machine and all crafts requiring scissors, my plant table, seed incubation area oh and yes my desk!  All of my “Just need to get that done”.  I have stuff.  I  bought a bunch of perennial seeds, a few veggie seeds, which, because my husband is not loving the idea of raised flower beds…I think he actually said “no” hell no” and then “over my dead body” all which have negative overtones that lead me to believe no raised vegetable beds in my immediate future at least ….never to be deterred, I am going to have “patches ” of veg throughout my back garden flower beds…… can’t keep a good girl down! So with all of those little projects to get done this month, in comes some “possible” paid  work.  Add to that, I have to make some samples of gluten free goodies (of which I have some super recipes) to Williams Sonoma, they “may want me to demo again for them.
